Italian Sausage Soup Recipe

Ingredients:  
1 - 2 TBL Olive Oil
1 pkg. Italian Sausage or 5 sausages sliced chunky
2 leeks, mostly white part sliced thin (substitute onions sliced thin)
2-3 cloves of garlic, minced
3 carrots, sliced
2 medium zucchini, quartered and sliced chunky
1 can diced tomatoes with juice
1 can white beans, drained and rinsed (any kind, I use Great Northern)
8 c. chicken or vegetable stock
1 pkg. gnocchi (found in pasta aisle)
1 TBL. Dried Basil
red pepper flakes to taste (I use about a tsp)
salt to taste (1/2 tsp or more)

Directions:
In a heavy bottomed soup pot, brown sausage chunks in olive oil.
Add garlic and sauté 2 minutes.
Add leeks, carrots, and zucchini and sauté until translucent.
Add basil, red pepper flakes, and salt.
Add tomatoes with juice, beans and chicken stock.
Bring to a simmer and cook until veggies are tender.
Add gnocchi a few minutes before serving, they rise to the top of the broth when ready.
