Ingredients: 6 cups of mashed potatoes* 3 tbsp softened butter 1 tsp salt 1/2 cup light cream 3 cups all-purpose flour
*Using a potato masher will help with creating thinner lefse, but if you don't have one then regular mashed potatoes are okay too. Your lefse will just be a bit thicker.

Directions:Mix all ingredients in a large bowl. Make a ball the size of a Japanese orange. Roll with rolling pin (or long narrow glass) on a lightly floured surface or tea towel** Roll out as thin as possible to handle. Fry on 200C (400F) griddle. Use spatula to turn once. When brown spots appear, they are cooked.
** I did notice a huge difference using a heavier rolling pin so if you have one, use it. |

Notes: Lefse is a traditional soft Norwegian flatbread. This is a dish my Norwegian grandfather would make usually during the Christmas season.
There are many ways to eat Lefse but the most common and traditional in our family is spreading butter on the flatbread and then rolling it up and eating it with your hands. I've heard other ways include spreading jams/jellies or rolling it up with smoked salmon.
