5 or 6 small to medium zucchini
1 large onion, peeled and thinly sliced
1 1/2 tsp. curry powder
1 c. heavy cream
3 c. chicken broth
1/2 c. milk
salt, pepper, chopped chives

Directions:
Directions:
1. Rinse zucchini, pat dry, trim ends,
2. Cut one in two; thinly slice one half. Stack slices; cut into very thin strips (about 1 c.). Place in saucepan; water to cover; boil 3 to 4 minutes; drain and reserve.
3. Cut remaining zucchini into small pieces. Place in saucepan; add onion; sprinkle with curry powder; stir to coat.
4. Add broth; bring to boil; cover; simmer 45 minutes.
5. Blend to a fine puree.
6. Add cream, milk, salt, pepper and reserved strips.
7. Chill. Serve with chives.
