Ingredients: Two 3X7 or one 5X8 pound cake (regular or gluten free) 6 cups vanilla pudding 12 oz jar black raspberry or blackberry jam 1/2 to 2/3 c. orange juice 1 c. whipping cream, whipped with 1/4 c. powdered sugar Slivered almonds (optional)

Directions:Slice pound cake into 1 inch slices Sprinkle the orange juice over the cake slices and allow to soak in. Spread jam over cake slices Spread a thin layer of pudding in bottom of trifle bowl or other large glass bowl Place a layer of cake slices in bottom of bowl, cutting to fit like a loose jigsaw puzzle. Top with a layer of pudding. Repeat 2 more times or until cake slices are all used. Refridgerate 8 hours or overnight. Top with whipped cream and if desired, slivered walnuts before serving. |

Notes: I have several old, large loaf pans that I use to bake the one large cake. If you use typical bread pans or buy a pre-packaged pound cake, you will probably need 2 cakes to fill a trifle bowl. If using a smaller bowl, just cut ingredients in half.
