2 cups flour
1 cup sugar
1 cup brown sugar, firmly packed
2 tsp. allspice (or cinnamon)
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup canola oil
1/2 cup butter, softened (1 stick)
4 eggs
4 cups grated carrots
1/2 cup raisins
1/2 cup coconut
1 cup chocolate chips

Directions:

Preheat oven to 350º.

Combine flour, sugar, brown sugar, allspice, baking powder, baking soda, and salt.

Add canola oil and butter and mix well. Add eggs one at a time and beat well.

Fold in carrots, raisins, coconut, and chocolate chips.

Pur into 3 - 8 " round pans or 1 - 9x13" pan, greased and floured. Bake for 45 - 60 minutes, depending on pan.

Ice with cream cheese or buttercream frosting.
