Directions:Thoroughly mix undissolved yeast with 2 c flour, oatmeal, brown sugar, and salt.
Heat milk and water with butter over low heat until warm (butter does not need to melt). Mom heats this in the microwave on high in a 1 qt measuring pitcher for 1 1/2-2 mins.
Add liquid to dry mixture. Beat for 1 ½ – 2 min at medium speed, scraping bowl occasionally. Add ½ c flour. Beat on high for 1 ½ – 2 min, scraping bowl occasionally.
Stir in additional flour, using dough hook, if you have one. If not, mix by hand and knead for about 5 min. Mom usually adds ½ c at a time for 3-4 times totaling 1 ½ -2 c added. Mom keeps the dough fairly soft.
Round up dough in greased bowl; grease top. Let rise in warm place until doubled in bulk, about 1 hr.
Divide dough into 2 parts. Roll each part into an oblong about 15 x 18 inches. Sprinkle each with ¼ c of mixture of 1 c sugar and 1 T cinnamon. Roll up like jelly roll.
Place in greased (Mom uses vegetable spray) loaf pans (two 9x5x3). Again, let rise until almost doubled in bulk, 40-50 min, depending on the degree of warmth. It may not take that long.
Brush top with 2 T softed buter (works best of almost to melted stage but not quite so that it doesnt all run down the sides) and sprinkle generously with the remaining ½ c of cinnamon sugar mixture. Bake at 325-350 for 45 min. |
