Aunt Bea's Football Soup Recipe

1 large onion
3 carrots

2 tbsp. garlic (I use minced garlic in little glass jar)
2 quarts College Inn beef broth
1 - 16 oz. can of diced tomatoes
1 box of frozen chopped spinach
1 small can of tomato paste

2 bags of meat or cheese tortellini

1 - 3 lbs. hot or spicy Italian sausage (Johnsonville brand works well)
1 tsp. thyme
1/2 tsp. basil
2 tsp. oregano

Parmesan cheese to taste.





Directions:
Directions:
Saute the onion, carrots and garlic in large pot.

Add beef broth, diced tomatoes, frozen chopped spinach and tomato paste. Simmer for 20 minutes.

In a separate pot, boil 2 bags of meat or cheese tortellinis, drain and add to soup.

Bake or fry 1 - 3 lbs. of sausage. Slice and add to soup.

Add thyme, basil and oregano. Season with salt and pepper.

Cook all for 5 minutes.

Turn off heat. Let stand for 10 minutes and serve.

Sprinkle Parmesan cheese over soup, if you like Parmesan cheese.
