Butternut squash, peel and cube
1 onion, chopped
1 apple, peel, seed and chop
1/2 c orange juice
2 Tbsp olive oil
2 Tbsp butter
6 cup chicken stock
salt, pepper, basil, chives to taste


Directions:
Directions:
Saute onion in oilive oil until soft.
Add butter and squash & apples and cook until squash is softened.
Add broth and seasonings and cook on med. heat for 20 minutes or transfer to the oven and bake 350* 1 hour uncovered.
Before serving smash the soup a bit or for smoother soup use immersion hand blender and puree.
