7/8 cup sifted flour
1/2 tsp. cream of tartar
1/4 tsp. salt
1 1/4 cups sifted sugar
1/3 cup water
5 egg whites
5 egg yolks
1 tsp. vanilla

Directions:
Directions:
Sift flour once, measure. Add cream of tartar and salt; sift together 4 times. Boil sugar and water until a small amount of syrup forms a soft ball in cold water or spins a long thread. Pour syrup in fine steam over egg whites, beating constantly. Continue beating as mixture cools. Fold in egg yolks and vanilla; then fold in flour a small amount at a time. Pour into untreated tube pan. Bake at 350º for 40 minutes; then decrease heat to 325º and bake 30 minutes longer. Remove from oven and invert pan 1 hour or until cold.
