3 Tbsp. AP flour
3 1/2 Tbsp. cornstarch
1/4 tsp. salt
1/2 cup orange juice concentrate
3 Tbsp. lemon juice
2 Tbsp. unsalted butter
4 eggs, seperated
1 tsp. vanilla extract
1/2 tsp. cream of tartar
1 pre-baked pie shell

Filling: Whisk 1 1/2 cups of sugar, the flour, cornstarch and salt together in a large saucepan. Add the orange juice concentrate, lemon juice and 1 1/2 cups of water. Bring the mixture to a boil, whisking continuously. Whisk in the butter and remove from the heat. Lightly beat the egg yolks in a bowl. Stream in (temper) 1/2 cup of the hot orange juice mixture while whisking the yolks. Add the yolk mixture to the orange mixture in the saucepan and whisk over medium-low heat until very thick and glossy (5 minutes). Pour the mixture into the pie shell and set aside.
Meringue: Heat the oven to 350º F. Beat the egg whites, vanilla and cream of tartar to soft peaks using a hand mixer. While beating, add the remaining 1/2 cup sugar, until stiff peaks form. Gently spread the meringue over the hot filling to the edges of the crust. Bake until the meringue is lightly browned (about 10 minutes). Cool on a wire rack. Serve at room temperature.

Personal Notes:
When spreading the meringue over the filling, make sure you make a seal with the meringue and the crust, (meringue has a tendency to shrink when placed in a hot oven.) This will prevent the meringue from pulling away from the crust.
