2 cups vanilla wafer crumbs
¼ cup melted butter
½ cup firm butter
1 ¼ cup icing sugar
2 eggs
1 tsp vanilla
½ pint whipping cream
1 large tin crushed pineapple – well drained
maraschino cherries (optional)

Directions:
Directions:
Combine ½ of crumbs and melted butter. Put aside other ½ of crumbs for top. Pat the rest into 9”x12” pan and press down smoothly. Cream remaining butter, adding icing sugar and beat thoroughly. Add eggs one at a time, beating well. Add vanilla and spread over crumbs in pan evenly (this takes time).

Whip the cream until stiff and fold in well-drained pineapple. Spread evenly over the mixture in the pan. Sprinkle remaining buttered crumbs over the top. Decorate with halved cherries.

Place in the freezer for 3 hours before serving.
