1 cup white sugar
1 cup oil
3 eggs
½ tsp salt
1 1/3 tsp soda
1 ½ tsp baking powder
1 1/3 tsp cinnamon
1 tsp vanilla
1 1/3 cup flour
2 cups grated raw carrots
½ cup walnuts, chopped

Icing:
4 oz pkg cream cheese
2 2/3 cups icing sugar
¼ cup butter or margarine
1 tsp vanilla

Directions:
Directions:
Beat sugar and oil. Add eggs, beating well. Add dry ingredients. Beat well. Fold in carrots and nuts. Bake at 300˚F (hotter makes it darker) for 1 hour in a 7”x11” pan. Bake ½ hour for layer pans.

Icing: Beat well with electric beaters. Double recipe for layer cake.
