2 cups cherry tomatoes
2/3 cup artichoke hearts, drained and quartered
4 cloves garlic, minced
1 tbsp capers
4 boneless, skinless chicken breasts
2 tbsp margarine or butter
1 ½ tbsp balsamic vinegar
¼ tsp each, salt and pepper
2 tbsp chopped fresh oregano (or 2 tsp dried)

Directions:
Preheat oven to 425˚F. Spread tomatoes, artichokes, garlic and capers on a large, rimmed baking sheet. Place chicken on top. Dot with butter, drizzle with balsamic vinegar, and sprinkle with salt, pepper and oregano. Roast for 25 minutes, or until the chicken is cooked through. Serve with whole grain couscous or brown rice.
