3 lb. Prime Rib roast
¾ cup Dijon mustard
5 cloves grushed garlic
2-3 tbsp coarsely ground pepper
1 tbsp salt

Directions:
Directions:
Combine and rub mixture into meat, underneath the fat cap. Start roast off in preheated 425˚F oven for 15-20 minutes. Reduce heat to 300˚ and cook slowly. For rare to medium rare, 90 minutes total cooking time. A meat thermometer is best. Ask butcher to leave the fat cap on, as it helps baste the roast as it cooks.
