3 tomatoes, wedged
1 cucumber, sliced
1 onion, sliced
2 red peppers, ringed
6 tbsp olive oil
2 tbsp wine vinegar
salt and pepper
1/3 pound feta cheese, coursely crumbled
2 dozen black olives
oregano (dried or fresh)
Directions:
Directions:
Combine vegetables. Shake dressing ingredients. Pour over and toss. Top with feta and olives. Sprinkle with oregano/parsley.
