1 cup chopped onion
4 cloves garlic, minced
3 tbsp vegetable oil
1-2 minced chilies
1 tsp ground cumin
˝ tsp dried oregano
3 ˝ cup fresh tomatoes, chopped
3 cups vegetable stock
1/3 cup fresh lime juice
salt to taste
grated Monterey Jack cheese
tortilla chips, crumbled
chopped fresh cilantro

Directions:
Directions:
In a medium soup pot, sauté onions and garlic in the oil until the onions are soft. Add chiles, cumin, and oregano. Sauté a few minutes. Add chopped tomatoes; sprinkle with salt. Cover the pot and cook gently until the tomatoes release their juices. Stir occasionally. Add the stock and simmer. Cover for 15 minutes. Add lime juice and salt to taste.
Serve topped with grated cheese and crumbled tortilla chips. Garnish with cilantro if desired.
