6-7 lb uncured, bone-in ham (usually found at Trader Joe's or Whole Foods)
8 oz. apricot preserves
2 tbsp. whole fennel seeds
2 tbsp. whole coriander seeds
1 tsp. whole black peppercorns

Pre-heat oven to 375 F. Place ham on rack in roasting pan with cut side facing down and cover pan with foil. Cook in pre-heated oven for 40 minutes.

While cooking, place fennel, coriander, and peppercorns in an envelope or wrap in pouch made of foil. Using bottom of heavy saucepan, crush seeds. If pan is not working out (those peppercorns are hard!), you can go outside and smash your envelope/pouch with a brick or rock (my usual plan of attack). Mix the crushed seeds and peppercorns with the apricot preserves to make the glaze.

After 40 minutes, remove ham from oven and cover with 1/4th of the glaze. Return the glazed ham to the oven un-covered and cook for 20 minutes.

After 20 minutes, remove ham from oven and add another 1/4th of the glaze to the ham. Return the ham, this time covered, and cook for another 20 minutes.

The ham should be warmed throughout after second 20 minutes. Let rest covered in tin foil for 30 minutes before serving.
