Pan drippings from turkey or use butter and demiglace chicken
1 c. Madeira
6 T. oil
1-2 shallots minced
6 T. flour
4 c. chicken or turkey stock
2 bay leaves
4 lg sage leaves
salt and pepper to taste

Directions:
Directions:
Heat demiglace with 1 T. butter, then add wine and cook until slightly reduced about 2 min.
Set aside. In skillet, saute shallots in butter and oil until brown.then add flour and cook about 1 min. Add stock and whisk, then bay leaf and sage. Increase heat to boil, then reduce and simmer for 8-10 min. until thckened.
Add wine sauce. Remove herbs and serve.
