1 Large Beaten Egg White
3 Cups of Old Fashioned Oats (not instant)
1 1/2 Cups chopped nuts (almonds, pistachios, pecans or walnuts)
1 1/2 Cups of coconut shavings
1/2 cup agave syrup
1/4 cup olive oil or warmed coconut oil
1/4 cup of sunflower seeds
1/4 cup of pumpkin seeds
2 Tablespoons of light brown sugar or coconut sugar
1/2 teaspoon of cinnamon

Preheat oven to 300 degrees. Combine all ingredients well until oats are coated. Spread out in a rimmed baking sheet.

Bake granola, stirring every 10 to 15 minutes, until golden brown and dry, 40-45 minutes. Let cool on baking sheet (it will crisp as it cools).

Mix in dried cherries, cranberries, blueberries, or raisins as desired. Granola will last 2 to 4 weeks in an airtight container kept at room temperature.

You can add chocolate chips, or sub the agave for honey or maple syrup or a combination of any and all. Serve over ice cream, low fat yogurt, or fresh fruit.
