1 1/2 lbs ground beef - 75% or 85% lean
4 slices of bread
4 tbsp parsley
1/2 tbsp oregano
3 tbsp grated parmesan cheese
1/2 tbsp pepper (fine)
1 large egg (or 2 small)

Directions:
Directions:
Blend each slice of bread separately and place in a mixing bowl.

Mix all spices together.

Combine ground beef, bread, spices and egg and mix well. If meat is too dry add another egg - If it is too wet add more bread.

Shape meat into 1" to 1 1/2" diameter balls and place onto a baking sheet.

Cook at 325º on the second to last rack for 15-20 minutes - the meatballs should begin to bubble.

Turn meatballs over - they should be brown on the bottom.

Cook another 10-15 minutes or until done.
