Harvey’s Bristol Cream (optional)

Fish Ritz

Haddock fillets - Baby Haddock is best.

Place coated fish on tray uncovered. Drizzle melted butter* on the fillets and bake in a 400° oven for about 15—20 minutes.
Auntie Theo likes to add a little uncooked bacon on top of the fish fillets before baking.


*This butter should not have any milk or sherry added to it.

Melt butter and add the Sherry; cook about a minute or so until the alcohol burns off. Add a little milk to the mixture.
Crush Ritz crackers by putting some in a plastic bag and rolling them with a rolling pin or use a processor.
Dip chicken in liquid then coat with Ritz crumbs. Place on baking tray, drizzle a little bit of butter* on each piece of chicken, cover with aluminum foil, and bake in a 350 degree oven for about 1 hr. Remove foil, raise heat to 400 degrees and keep in oven for 5—10 mm. more until chicken is lightly browned.
