3 1/2 C powdered sugar
1/4 C pasteruized liquid egg white product
1 t water
1/4 t pure peppermint extract
2 (4oz) bars dark chocolate, chopped
1 t vegetable oil

Directions:
Directions:
Line 2 baking sheets with parchment paper. Set aside. In a stand mixer with paddle attachment, combine the powdered sugar, egg white product, 1 t water, peppermint extract and food coloring (optional). Mix on low speed until smooth. Increase the speed to high and beat until the mixture forms a stiff dough, if the mixture becomes too stiff, add extra water, 1/2 teaspoon at a time. Put the mixture on a work surface. Roll into 1 inch balls and then flatten. Put on parchment and allow to dry. Once dry melt chocolate in double boiler with vegetable oil and put back on parchment to dry.
