1 loaf of frozen bread dough thawed and allowed to rise.

Zah-thar topping Simsoom topping
1/2 c. zah—thar 1/2 c. sugar
1/2 c. sesame seeds 1/4 lb. or about 3/4 c.sesame seeds
1/2 c. oil 2 tbsp. oil — add just enough
to spread
Mix in a bowl. Mix in a bowl.

Each topping recipe is enough for 1 loaf of dough. Let dough rise once. Put a little oil on the bottom of a pizza pan. Spread out the dough with fingers. Spread out zah—thar or sesame mixture on top. Press into dough with fingers leaving finger impressions on the dough.
Bake at 450 degrees for 10 to 15 minutes. Keep checking as ovens vary.

Zah-thar is an acquired taste — but oh so delicious. Unfortunately, there is no English translation for this herb and it can only be found in Middle Eastern grocery stores or bakeries.
