Ingredients: Urban (Qurban or Qirban) (Holy Bread) This bread is usually made for the forty-day Mass for the dead. The families made the bread and brought it to the priest to be blessed. It was then offered to the mourners after the Mass. In the Eastern Catholic Rite, this bread is also used for Holy Communion and is dipped in Sacramental Wine.This is Auntie Emily's recipe. 5 lbs. (20 c.) flour — King Arthur is best 6-7 c. warm water 2 rounded T. yansoon 1 level T. mahleeb 1/4c. orange water 1 C. sugar To proof yeast 1 T. sugar 3-4 Tb. yeast 3/4 c. warm water

Directions:Dissolve yeast in a bowl with 1 T. sugar and 3/4 c. warm water. Let stand 5—10 minutes to proof. Mix all dry ingredients together. Add minimum amount of water. Add orange water and yeast. Mix together. Add a little more water if needed. The dough shouldn't’t be too stiff. Knead in a dough mixer 3—4 minutes. ( It will be necessary to divide the dough in thirds when putting it in the mixer because it will not all fit in at once. When the batches have been kneaded, put in a large bowl and knead together.) Knead the dough until it is smooth and does not cling to the bowl. Allow to rise about 2 hours. Break off pieces of dough about the size of an orange, or smaller. Get a bowl of oil. Dip hand in oil and lightly pat the top of each ball with a very thin coating of oil. This prevents the top from drying out. Cover with a cloth and allow to rise again. (About ½ hour.) Flatten out balls and prick twice in the center with a fork and a few times around the edges. Bake at 375˚ about 15—20 minutes. Start baking on the lowest shelf in the oven. When the bottom is brown, move to the middle shelf and continue baking until lightly brown. When this bread is made for religious purposes, 4 T. of sugar would be used and the mahleeb and yansoon would be omitted. |
