1 (6 oz.) pkg. UNCLE BEN'SŪ long grain and wild rice
1 (4 oz.) fresh sliced mushrooms
1 tsp. prepared mustard
1/2 tsp. salt
2 1/4 c. water
1 (10 oz.) pkg. frozen spinach
3/4 c. onion, chopped
1 tbsp. butter
1 (8 oz.) pkg. cream cheese (soft or cut in cubes)

Directions:
Directions:
Place contents of rice and seasoning packets, mushrooms, mustard and salt in 2-quart casserole. Combine water, spinach, onion and butter in saucepan. Bring to a boil. Pour over rice mixture and stir. Cover tightly and bake at 375 degrees for 30 minutes. Uncover. Stir in cheese. Bake uncovered 10 to 15 minutes.

This dish goes really well with beef -- we serve it on Christmas Eve. It has a hearty "earthy" flavor :) says Dad.
