Mqaniq - Lebanese Sausage Recipe

Sausage – Lebanese - Mqaniq

3 cups ground beef
3 cups ground pork
3TB. coriander
1/8 tsp. pepper
½ tsp. salt
1 TB. allspice
1 tsp. cinnamon
1/8 tsp. nutmeg
2 cups Burgundy wine

Mix all stuffing ingredients thoroughly. Refrigerate for 3-4 hours, stirring occasionally. Stuff filling into casing, using a 1” funnel slipped into the casing. With thread, tie into desired length. Age by hanging in a cold place or refrigerate for two days before freezing. It's really great this way but casing is hard to find so just refrigerate for a day, then make into patties or rolls and freeze. When ready to serve, fry in a skillet like regular sausage.
You can also add bread crumbs or shredded American bread to absorb some of the liquid.

3 cloves crushed garlic
2 crushed bay leaves

1 cup coarsely ground pork
1 cup ground beef
1/2 tsp. coarse black pepper
dash nutmeg
1 tsp corriander
salt to taste
1 tsp. fennel (optional)
