1/2 lb. candied cherries
1/2 lb. candied pineapple slices
1 lb. walnuts, pecans or a combination of both
1 lb. vanilla wafers
1/4 lb. raisins
2 eggs
1/2 c. sugar
1/4 tsp. salt
1 can (12 oz.) evaporated milk

Directions:

Set aside 4 whole cherries, two pineapple slices and 16 pecan or walnut halves to decorate the top. Chop remaining fruit and nuts (I actually use more fruit than the recipe calls for . . . it can handle more . . . I also use both green and yellow candied pineapple to make it more festive without adding citron which I am not fond of). Crush vanilla wafers. Combine fruit, raisins and nuts and set aside.

In a bowl, beat eggs with sugar, salt and milk. Combine all ingredients and pack it into a wax paper lined tube pan (I would like to try without the wax paper because it's hard to smoothly line the pan and the wax paper wrinkles up into the cake). Decorate top with fruit and nuts. Bake at 325 degrees for 50 minutes or until the cake portion feels solid. Let stand 10 minutes. Turn cake out of pan and then back over again so that decorations are on top.. Taste improves with age.
