2 Tb. olive oil
2 medium onions, chopped
l large clove of garlic, minced
1/2 tsp. salt
3/4 tsp. black pepper
1/2 tsp. cinnamon
1/2 tsp allspice

l can whole tomatoes, chopped with liquid
2 pkg. frozen lima beans or 3/4 cup dry lima beans soaked overnight plus 2 cups water
In a deep pot, sauté onions, garlic and seasonings in olive oil over medium heat for about 10 minutes until the onions are translucent and slightly golden but not brown. (It is better to add the garlic a few minutes after the onions because you don’t want the garlic to turn brown.)
Add tomatoes, with their liquid and the beans. Turn the heat up, cover pot, and bring to a boil. Reduce heat to a low simmer for about 20 minutes if frozen beans are used. Dry beans, soaked overnight, take 2 hours or more of simmering to be tender and need the additional water.
Stir occasionally, adding water if necessary, until beans re done. Serve over rice.
