· 125 mL (1/2 cup) rolled oats

· 125 mL (1/2 cup) orange juice

· 375 mL (1 1/2 cups) flour

· 125 mL (1/2 cup) sugar

· 5 mL (1 & 1/4 tsp) baking powder

· 2 mL (1/2 tsp) salt

· 1 mL (1/4 tsp) baking soda

· 125 mL (1/2 cup) oil

· 1 beaten egg

· 250 to 375 mL (1 to 1 1/2 cups) Saskatoon berries

Topping:

· 30 ml (2 tbsp.) sugar

· 1ml (1/4 tsp.) cinnamon

Instructions: Preheat oven to 190 C (375 F). Soak rolled oats in orange juice and set aside. Mix dry ingredients together.

Combine oil and egg. Add rolled oats mixture and the saskatoon berries and stir. Make a well in the center of the dry ingredients Pour liquid mixture into dry ingredients. Fold together being careful not to overmix.

Spoon muffin mix into 12 large muffin cups. Sprinkle with sugar and cinnamon topping mixture. Bake at 190 C (375 F) for 18 to 20 minutes.
