1 1/4 cup brown sugar
1/2 cup cooking oil
1 egg
2 tsp. vanilla
1 cup buttermilk
1 1/2 cup diced rhubarb
1/2 cup chopped walnuts
1/4 tsp. black walnut flavoring
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Topping
1 tsp. melted butter
1/3 cup sugar
1 tsp. cinnamon

Directions:
Directions:
In a large bowl put brown sugar, oil, egg, vanilla, and buttermilk. Mix well. Stir in rhubarb, walnuts and flavoring. In a smaller bowl combine flour, baking soda, baking powder, and salt, then ass rhubarb mixture. Spoon batter into muffin pans. Combine topping mixture and spoon over top of the muffins, pressing it down. Bake 350º-375º for 20-25 min.
