1/2 lb. ground beef
1/2 lb. ground pork
1/2 lb. roast beef, cut in 1/2 in. cubes
3 tbsp. butter
1 med onion, chopped fine
1 garlic clove, minced
1/3 bunch cilantro, chopped
2 tsp. tabasco
1 tsp. leaf oregano
2 tsp. granulated sugar
1 tsp. onion powder
2 tsp. cumin
1 tsp. dried parsley
1/2 tsp. black pepper
2 tbsp. flour
3 c. chicken or beef stock
1 can Mexican beer
1 lb. green chili, peeled, seeded, and diced
1 tomato, peeled and diced

Directions:
Directions:
Brown the beef, pork and roast beef, saute in the butter; onion and garlic. Add the cilantro, tabasco, oregano, garlic, onion powder, cumin, parsley, pepper and flour. Mix all these ingredients together and cook over low heat for a few minutes. Now add 3 cups chicken or beef stock, Mexican beer, green chilies and diced tomatoes. Bring to a simmer. Thicken with a roux of 4 tbsp. butter and 4 tbsp. flour. The chili should be the consistency of stew. Let simmer for at least 45 min to 1 hr.

Best when reheated, I recommend serving green chili topped with white cheese and garnished with lettuce and tomatoes and accompanied by fresh sopaipillas and ice cold beer.
