1 Apple, peeled, cored, diced
1 Pear, peeled, cored, diced
½ cup dry White Wine
½ cup Chick Stock
3 oz. Dried Fruit (apple, peach, pear, prune)
1 tsp Cinnamon
1 Tbs Olive Oil
1 lb Pork Tenderloin, cut into ¼” medallions
2 Tbs Brandy

Directions:
Combine apple, pear, wine, stock in large saucepan. Boil, then reduce to simmer over low heat until fruit is softened slightly, around 10 minutes. Add dried fruit and cinnamon. Cook ~30 minutes until fruit is plumped. Cool.

Heat oil in large sauté pan at medium heat. Add pork and sauté until browned, ~ 2 minutes per side. Remove from heat and set aside. Turn up heat and add brandy. Heat until brandy is mostly evaporated. Add a little of the cooking liquid from the fruit. Cook over medium heat, stirring constantly to deglaze pan. Stir in fruit mixture and cook until heated through, ~ 2 minutes. Return pork to pan and cook, stirring until tender, ~ 5 minutes.
