2 Eggs, room temperature
1 3/4 Cup White Sugar (or Splenda)
2 heaping tsp. ground Cinnamon
1/2 Cup Vegetable Oil (or Canola Oil)
6 medium Apples, peeled, cored & sliced or chopped
2 Cup Flour
2 tsp. Baking Soda

Preheat Oven to 350º

1. Mix together eggs, sugar, cinnamon & oil until well blended. Stir in apples until well coated. Add in flour and baking soda. Mix well, using fork, until all flour is absorbed by wet ingredients.

2. Pour into greased 9 x 13 baking pan. Bake for 55 minutes until toothpick inserted in center comes out dry.
