2 3/4 Cups All Purpose Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1/2 Cup Shortening
8 TBsp (1 stick) Butter, softened
1 1/2 Cups White Sugar, plus 3 TBsp
2 Eggs
1 TBsp Ground Cinnamon

Preheat Oven to 350º

1. Sift together flour, baking soda and salt into a bowl. Set aside

2. With standing or handheld mixer, cream together shortening and butter. Add 1 1/2 cups sugar and continue beating until light and fluffy, 5 minutes. Add eggs, 1 at a time, beating well after each addition. Add the flour mixture and blend until smooth.

3. In separate bowl, mix the 3 tablespoons of sugar with cinnamon.

4. Roll dough out by hand into 1 1/2" balls. Roll balls into cinnamon sugar. Flatten balls into disks and place evenly on ungreased baking sheet.

5. Bake until light brown with moist center, 10 to 12 minutes. Cool on wire rack.
