Steamed Chinese Shrimp Dumplings Recipe

Ingredients: 1 lb. of raw, cleaned, shrimp that has been chopped in half 8 oz.. can of bamboo shoots that have been drained 3/4 teaspoon each minced ginger and garlic 2-3 scallions, chopped 1 tbsp. each of oyster sauce and canola oil 1/2 teaspoon each of salt and sugar 1/2 teaspoon of sesame oil 1 tbsp. of cornstarch About 40 Chinese dumpling/wonton wrappers (Available in Asian markets)

Directions:Add all ingredients except dumpling wrappers in the bowl of a food processor and pulse in 1 second bursts until mixture is evenly chopped but not pureed. Put in a large bowl and place in the fridge for an hour or so. When ready to make the dumplings, hold a wrapper in your hand and moisten the edge with water using a pastry brush. Place 1 teaspoon mixture in the center and then seal the top and bottom edges. Then push in the right side and seal and then the left. Make sure the dumplings are totally sealed. When ready to cook, grease a wide skillet and fill with 1/2 inch of water or so. Bring to a boil and place as many dumplings that will fit in one layer. Cover, and steam for 5-7 minutes. Serve with dipping sauces of choice. |

Notes: After the dumplings are cooked you could sauté the dumplings in a skillet to lightly brown the sides creating pot stickers.
