3 8 oz packages of Cream Cheese
1 Cup White Sugar (or Splenda)
1 TBsp Vanilla extract
5 Eggs
1 box Vanilla Wafer Cookies
1 Can of Fruit Toppings (can pie filling or frozen fruit)
Foil Cupcake liners

Directions:

Preheat Oven to 350º

1. Cream the cream cheese until soft. Add in sugar, vanilla and eggs. Beat together until smooth and creamy.

2. Place wafer at bottom of each foil baking cup. 1/2 fill each cup with batter.

3. Bake for 15 to 20 minutes, or until light golden brown. Remove from oven and allow to cool on wire rack.

4. Once cooled, spoon on fruit topping.
