2 1/4 tsp. Dry Active Yeast (or 1 packet)
3/4 Cup Warm Water
1/4 Cup White Sugar (or Splenda)
3/4 tsp. Salt
1 Egg, room temperature
2 1/2 Cups Flour
1/4 Cup Butter or Margarine, softened
1 TBsp Ground Cinnamon
1/2 Cup Brown Sugar (or Splenda Brown Sugar)
1/2 Cup Raisins (optional)
1/2 Cup Nuts (optional)

Preheat Oven to 400º

To make Cinnamon Buns:
1. In bowl, dissolve Yeast in warm water. Let stand until creamy, about 10 minutes.

2. To Yeast, add white sugar, salt, egg & 1 cup flour, stir well. Stir in rest of flour, 1/2 cup at a time, mixing well each time until dough forms ball and pulls away from sides.

3. Turn dough out onto floured surface and knead for 6 to 8 minutes, until smooth. Cover and let rest for 10 minutes.

4. Lightly grease 8 x 8 baking pan. Roll dough out to 1/4 inch thick. Smear dough with butter & sprinkle with cinnamon, brown sugar, raisins and/or nuts.

5. Roll dough along long edge to form a log. Slice into 8 equal size pieces. Place in pan with cut side up. (For something extra: sprinkle bottom of pan with raisins, nuts &/or syrup)

6. Cover & place in warm dry place and let rise until doubled, about 45 minutes.

7. Bake at for about 20 minutes, until golden brown.

If Making Cinnamon Raisin Bread:

6. Cover & place in warm dry place and let rise until doubled, about 45 minutes.

7. Brush top of loaf with melted butter or spray with butter flavored cooking spray. Bake at for about 20 minutes, until golden brown.

Can make these up the night before -- after placing them in the baking pan, cover and place in refrigerator overnight. Next morning, remove from frig while preheating oven. Then bake for about 20 minutes till golden brown.
