8 Cups Flour
3 1/2 tsp. Salt
2 1/4 tsp Active Dry Yeast (or 1 packet)
1 Cup Olive Oil
3 1/2 Cups Warm Water

Optional: Italian Seasoning, Garlic & Herb Seasoning or Garlic Powder

1. Dissolve yeast in warm water till foamy, about 10 minutes.

2. In large bowl, combine 4 cups flour, salt & Olive Oil. Mix well. Continue adding flour 1/2 cup at a time, until ball forms of dough and it pulls away from the sides of the bowl. Dough will be wet & sticky feeling.

3. Turn dough out onto floured surface and knead until smooth, 6 to 8 minutes.

4. Form dough into a ball and place in a clean bowl that has been greased. Turn dough to grease all sides. Cover with saran wrap and place in a warm dry place to let rise until doubled, about 1 hour.

5. Preheat oven to 450º

6. When done rising, turn dough out onto floured surface. Divide and roll out each into desired size / shape for pizza.

7. For extra flavor, sprinkle crust with Garlic & Herbs or Italian Seasonings, or Garlic powder before adding sauce and topping.

8. Add sauce and toppings as desired. Bake at 450º for 20 minutes or until cheese is bubbly.

Preference is to use Olive Oil. This is a major flavoring factor of the dough.

(*) - tip for even rising: While making dough, preheat oven to 200 degrees. When reaches 200, turn oven OFF. Place covered bowl inside oven and let rise there.

This recipe makes 1 extra large, 2 medium or 4 personal pan pizzas.

Can make the dough ahead of time and freeze. To freeze, after kneading: form dough into ball. Wrap in saran wrap, place inside plastic, sealable container that is larger then the existing ball of dough and place in freezer. Dough will expand some during freezing period.
