1/2 Cup Olive Oil
2 Cups Green Bell Pepper, sliced thin (2 medium peppers)
2 Cups Onion, sliced thin (2 med onions)
2 Small Eggplants, cubed (peeled or unpeeled as desired)
2 Small Zucchini, sliced thin
2 Gloves Garlic, minced (2 tsp. minced garlic)
4 Large Tomatoes, peeled & Chopped
2 tsp. Salt
1/2 tsp. Ground Pepper
1/2 tsp. Basil
1/2 tsp. Parsley

Directions:

1. Heat oil in skillet and sauté onions for 10 minutes, until tender

2. Add peppers, eggplant, zucchini and cook for 30 minutes, stirring occasionally.

3. Add tomatoes, salt, pepper and basil. Cook 30 minutes longer.

4. Add some chopped parsley and taste for seasoning.
Serve hot or cold.

To peel tomatoes: Plunge into boiling water for a minute or two. Skin will peel off easily.
