2 cups chopped rhubarb
1 T sugar
1 t vanilla
2 C flour
1/3 C sugar
2 t baking powder
1/2 t ground ginger
1/4 t salt
1 C light cream
sugar

Directions:
Directions:
Combine rhubarb, 2 T sugar and vanilla in a bowl. Let stand for 5 minutes. Combine flour, 1/3 C sugar, baking powder, ginger and salt in a bowl. Add rhubarb mixture and cream to flour mixture and stir just until combined. Do not over mix! Drop rounded 1/4 C measures of dough onto greased cookie sheet. Sprinkle with sugar. Bake 400 degrees for 20 minutes.

Do not substitute milk for the cream as the cream is providing the fat to tenderize the dough.
