7 cups chopped carrots*
2/3 cup sugar
1/4 cup sour cream
3 tbsp. plain flour
2 tbsp. butter, melted
1 tsp. baking power
1 tsp. vanilla flavoring
1/4 tsp. salt
3 eggs, lightly beaten
1 tsp. Confectioners' Sugar

*May substitute 4 cups mashed sweet potatoes

Directions:
Preheat oven to 350º. Cook carrots in boiling water 15 minutes or until very tender; drain. Place in food processor or other appliance and process until smooth. Add all ingredients except Confectioners' sugar; stir or pulse to combine. Spoon mixture into a 2-quart baking dish coated with cooking spray. Bake for 40 minutes or until puffed and set. Sprinkle with Confectioners' sugar.
