Sinikka's Apple Pie Recipe

1 box Pillsbury pre-made pie crust
1 bag apples – Use Rome. Cortland. Eastern – or Macintosh whatever mixture of apples you like. Use a few Granny Smith make it nicely tart.
1 c white sugar or a little less
1-2 tsp. cinnamon powder
Dash of salt
3-4 tbsp. of cornstarch (can also substitute or tapioca or flour as thickeners) If using Macintosh use more thickener because is a softer apple. .
2 teaspoons lemon juice
Optional 1 egg/ or egg white for egg wash
Sprinkle of sugar or larger decoration sugar crystals.
2 – 3 teaspoons butter

Roll out one pie crust and fit into pie plate
In another bowl, put the peeled cored and apples cut into bite size chunks
Sprinkle apple chunks with lemon juice.
Place layers of apples into pie crust over each layer sprinkle a good dusting of the dry ingredients.
Add layers until complete and apples are well coated.
Dot the top with little pieces of butter.
Cover with the remaining pie crust and crimp closed.
Vent top pie crust with a hole or several slits.
Optional - brush top crust with beaten egg or egg white, then sprinkle on sugar.
I put the pie on a cookie sheet to catch any spills
Bake 15 minutes at 400 degrees.
Put crust protector on and reduce temp to 350 degrees.
Bake another 30 to 45 minutes until crust is golden brown and apple pie is starting to bubble.
Remove and cool and hour or 2 before slicing.

This is a sweet pie - not tart unless made with Granny Smith Apples.
