1 cup flour
1 cup water
1/4 tsp salt
4 eggs, one at a time
Filling:
2 lbs ricotta cheese
3 eggs
1/2 tsp salt
!/4 cup grated parmesan cheese
fresh parsley, chopped
pepper

Bake @ 350 for 30 min
Combine flour, water and salt with mixer. Add eggs, one a time. Batter will be thin.
Grease griddle lightly with oil. Using a tablespoon drop batter on griddle. When shiny turn over. Do not brown. Remove from griddle and place on paper towel.
Cool. (May be frozen at this point.)
Combine filling ingredients.
Place one tablespoon on each pancake. Put seam side down in a 13x9 pan coated with a layer of tomato sauce. After filling pan ,add more sauce to cover and sprinkle parmesan cheese on top. Cover with foil to bake.
