2 cups sugar
1 1/2 cups oil
4 eggs
2 cups plain flour
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
3 cups grated carrots

Frosting:
1 box confectioners sugar
2 tsp vanilla
8 oz cream cheese
3/4 stick butter
1/2 cup nuts(opt)

Directions:

Bake @ 350º for 25 -30 min
Grease and flour 3 8in cake pans

Cream butter and sugar. Add eggs beat well. Add dry ingredients, then the carrots.
Spread evenly into the 3 pans.

Frosting: combine all the ingredients and mix well.
