1 cup Bulgar
1 cup diced tomatoes
1/2 med cabbage (shredded)
1 med red onion diced to small cubes
1 bunch of parsley or cilantro
1 spring of mint chopped (optional)
dash of olive oil
juice from 1 lime
salt

Directions:
Directions:
Soak the Bulgar into abundant water for at least 2 hours.
Drain the water and squeeze the Bulgar to get rid of as much liquid as possible. Mix the Bulgar with tomatoes, cabbage, onion, parsley or cilantro, mint, oil, and lime juice, season with salt to taste - serve chilled
