1 Whole Chicken or Cut-up Chicken
2 quarts Chicken Broth
1-1/2 cup sliced Celery
1-1/2 cup chopped Onion
1-1/2 cup sliced Carrots
1 can cut Green Beans, drained
3/4 tsp. Salt
1/2 tsp. Pepper
3/4 cup Barley

Directions:
Directions:
In large, place: chicken, 2 qts. chicken broth (you can add a cup of water if you wish). Add celery, onion, carrots, salt and pepper. Cover pot. Bring to boil. Turn down to simmer. Simmer about 90 minutes.

Meanwhile, cook barley according to package directions. Set aside.

After 90 minutes, check that chicken is tender. Remove chicken from pot. Skin chicken and cut into cubes. (one chicken breast can be set aside and frozen for another use - like chicken salad or something) Add salt and pepper if needed. Add cut-up chicken,, barley and green beans to pot. Simmer for a few minutes.
