2 cups cold water
1 cup rice
1/4 cup chopped onions
1/2 cup butter
salt
pepper

Dill sauce:
2 cups sour cream
4 tbsp dill chopped
4 tbsp green onions chopped
1 tsp flour mixed in 1/3 cup water

Directions:
Directions:
Bring salt water and rice to a boil; until done. Fry onions in the butter. Pour over rice and mix well. Add some fresh dill.

Pick young sweet beet leaves and wash in warm water. Place on cookie sheet and into warm oven (250ºF) to wilt the leaves, it doesn't take long.

Place 1 tbsp rice filling in the beet leaf. Roll like a cabbage roll and place in casserole. Add a little warm water and bake at 300ºF for 3/4 hour. Serve with dill sauce.

Dill sauce:
Combine onions, dill and sour cream. Simmer for 15 minutes. Add flour and water to thicken and bring to a boil. Add salt and pepper to taste. Serve over the baked holubsti.
