Chicken Alfredo Recipe

4-6 chicken breasts, skinned and boned
1 egg, beaten
Olive oil
6-8 oz. mozzarella cheese, grated
Paprika
Italian bread crumbs (add a little Parmesan, too)
1 jar Ragu Alfredo sauce
1 can diced tomatoes (or fresh)
1 box penne pasta

Directions:
Dip chicken breasts in egg and coat with bread crumbs. Lay breasts in a greased baking dish and drizzle with olive oil, if desired. Bake at 400 F. for 20-30 minutes or until chicken is done.

Spread tomatoes over chicken; pour half of the Alfredo sauce over the chicken and sprinkle with mozzarella cheese. Sprinkle with paprika, if desired. Bake an additional 10-15 minutes, uncovered.

Cook penne pasta according to directions on the box; heat up the remaining Alfredo sauce and then toss with the cooked penne pasta.

Serve chicken over penne pasta. Add a parsley garnish to make it pretty!
