Shawarma Spice Mix:
2 tsp ground cumin
2 tsp ground coriander
3/4 tsp ground black pepper
1/2 tsp ground ginger
1/2 tsp ground allspice
1/4 tsp ground cardamon
1/4 tsp ground cloves
1/4 tsp ground sweet paprika
1/4 tsp ground tumeric
1/8 tsp ground cayenne pepper

Chicken Shawarma:
One batch Shawarma spice mix
1/2 c plain yogurt
1 1/2 T lemon juice
3 large cloves garlic, crushed
1 1/2 t salt
2 lbs boneless skinless chicken breasts
Olive oil

Directions:
Directions:
Combine the spice mix with yogurt, lemon juice, garlic, and salt in a large bowl. Add the chicken and toss to coat. Cover and refrigerate from 2 to 24 hours.
Preheat oven to 350 degrees and spread 1 T of oil on the inside of a large baking dish.
Scrape off excess marinade from chicken and, using a large non-stick skillet, fry in oil until lightly browned. Place chicken into oiled baking dish and bake, uncovered, until the chicken is fully cooked (no longer pink in the center).
Remove chicken from baking dish and slice thinly.
Serve rolled up in a flatbread ( with chopped vegetables of your choice ), toasted on a dry griddle or sandwich press. Or, try a sandwich spread of hummus, with tomato and cucumber.
