Chili Salmon Noodle Salad Recipe

500 g salmon fillet
1-2 Tbsp sweet chili sauce
1 Tbsp oil
200 g rice vermicelli noodles
1/2 pint cherry tomatoes
1 avocado
1 small red chili deseeded
1/3 cup each of mint, coriander and basil leaves
2 tbs salted peanuts
Dressing - 2 Tbsp lemon juice, 2 Tbsp fish sauce and sweet chili sauce, 1 Tbsp olive oil and 2 tsp sugar.

Heat oil in frypan over medium heat. Sear salmon and sweet chili sauce for 2-3 min each side.
Prepare noodles as pre instructions in packet. Meanwhile whisk all dressing ingredients.
Add cherry tomatoes, avocado and sliced red chili to dressing bowl and toss gently to combine. Add noodles and herbs and gently toss and combine again.
Break salmon into chunks and add to salad.
Serve with chopped nuts.
